Hearty Soup Recipes

I love soups. Regardless of thickness, texture and colour. I love 'em.

Before I lose these recipes. I shall blog it here.

WHITE BEAN AND ITALIAN SAUSAGE SOUP
Make a meal of this hearty soup by serving it with slices of olive or focaccia bread.
Preparation time: 20 minutes
Cooking time: About 35 minutes
Makes: 4-6 servings
2 Italian sausages
1 Tbsp olive oil
1/2 medium onion, diced
1/2 medium green bell pepper, diced
1 large garlic clove, minced
2 1/2 cups chicken stock
1 (19-oz.) can white kidney beans, drained and rinsed
1 (14-oz.) can diced tomatoes
1 tsp dried oregano
1/2 tsp granulated sugar

Grill or roast the sausages until cooked through. Cool to room temperature and then slice thinly. Heat the oil in a pot set over medium heat. Add the onion, bell pepper and garlic, and cook until softened, about 3-4 minutes. Mix in the sliced sausage and remaining ingredients, bring to a simmer and simmer 15 minutes. Season with salt and pepper and serve.


CURRIED CARROT AND PARSNIP SOUP
Mild curry powder gives a subtle taste. If you like things spicy, use hot curry powder.
Preparation time: 15 minutes
Cooking time: About 20 minutes
Makes: 4 servings
2 Tbsp vegetable oil
1 1/2 cups carrot, cut into 1/4 inch cubes
1 1/2 cups parsnip, cut into 1/4 inch cubes
1/2 medium onion, halved and thinly sliced
2 Tbsp flour
2-3 tsp curry powder
3 3/4 cups chicken or vegetable stock
* salt to taste
1/4-1/3 cup yogurt
1 green onion, thinly sliced

Heat the oil in a pot set over medium heat. Add the carrot, parsnip and onion, and cook until softened, about 4-5 minutes. Mix in the flour and curry powder and cook 1-2 minutes more. While stirring, slowly pour in stock. Simmer the soup 10 minutes, or until the carrots and parsnips are very tender. Purée the soup in a food processor or blender, or in the pot with a hand-held immersion blender. Return the soup to a simmer; season with salt. Ladle the soup into bowls. Top each bowl with a spoonful of yogurt and a sprinkling of green onion.


CHICKEN NOODLE SOUP
Feed a cold with this comforting chicken soup.
Preparation time: 15 minutes
Cooking time: About 25 minutes
Makes: 4 servings
2 Tbsp vegetable oil
1 (7-8 oz.) boneless, skinless chicken breast, cut into small cubes
1/2 medium onion, diced
1 celery rib, quartered lengthwise and thinly sliced
1 small carrot, quartered lengthwise and thinly sliced
4 cups chicken stock
1 - 1 1/2 cups egg noodles
- salt and freshly ground black pepper to taste
1 Tbsp chopped fresh parsley

Heat the oil in a pot set over medium heat. Add the chicken, onion, celery and carrot and cook 5 minutes, until the vegetables are softened and the chicken is just cooked through. Add the stock, bring the soup to a simmer, and simmer 10 minutes. Add the noodles, return to a simmer and cook until noodles are tender, about 8 minutes. Season with salt and pepper; stir in the parsley and serve.

Just an another week in August

I m lost of words to tell you what happened for the past 2 weeks. So I will let the pictures do the talking.

Yeah, we won 2nd place. It's always the second place, I don't understand why. But it's better than nothing.




Yaay...mock check! So...we decided to spend some on food...


So just now, we all went for dinner at a very nice Austrian Restaurant somewhere in PJ. It's called Klimt's. Named after a famous austrian painter Gustav Klimt.

Yummy...I felt so full after that I couldn't think straight. And did I mention I m not a fan of white wine? I couldn't finish so I let my friend to finish them. Red wine is okay but not white. We ordered tonnes of food, tonnes of sausages, tonnes of dessert. And the part would be the raw herring fish. Gosh...I have to finish them because my friends couldn't stand the fish smell. It's raw and it smell like fish. I mean the fish smell is so strong I felt I m eating fish from somebody's aquarium. But the sauce is nice :)

Here's are some of the dishes. There's loads more but I felt these are really nice.











Dessert is the best part of all. I could just lick each and every plate clean. The melted dark chocolate is perfect. The crepes is cooked to perfection. I m addicted to their desserts. So tomorrow I m gonna ask my Austrian karate mate for some austrian food. I wish I had bigger stomach.

Plans after the my last paper

Wooo...I m getting so so so excited. I m gonna feed myself and my friends (especially someone who came a long way here...ahem ahem) as much as we could and turn into big fat pigs before hitting back to reality (work, school, dillema) after the exams. I m gonna take loadsa pictures as I don't really know Malaysia myself, gonna dig thru snakeholes, racoon-holes, fly-holes for treasures. A lotsa wonderful things. I just can't wait.

Okay, here's the plan...
After my last paper, the moment I pass up my answer sheets, I m going to....
1) Breathe and breathe and smile and try not to regret anything

2) Go back, do some housekeeping as I turned my room into a jungle since my exam fever started. Sleep. And then dinner with my very-kesian-friend-whom-I-didn't-see-for-ages, Mr. David.

3) The next day, go shopping, buy someting for myself, bloodbath!!! It's been ages since I step into a shopping complex. Pick my friend from her house, gonna roam half of Malaysia with her since she didn't really have a holiday before. Anyone wanna join me? Oh Mike, you wan a cuppa? Starbucks okay?

4) Early in the morning, before the sun comes up, will then rush to KLIA to pick my very special guest. Then start to tour KL-Mallacca-Muar-Singapore-Penang-KL for 2 weeks. It's seems so short though, we should visit the east coast aswell but not enough time. :(
Gonna roll on any beach, gonna eat like nobody's business, I don't care if I m fat since I m single...muahahaha...I m loving my tummy to bits. *shy*

5) Planning a trip to Shanghai, China, with my aunt. My very stressful aunt needs a holiday badly...Why not? It's December babe, my best buddy gonna fly back to KK and leave me alone here. *sob*

6) I m doing a secret project. Muahaha...I m gonna get it done by January. And then got loadsa preparation to do. Hopefully it works.

7) As for work, I will hafta give trainning to 2 people. No idea who it will be. Hopefully everything goes well. Gonna catch up with my working stuff aswell. I've abandon work since October.

8) New semester gonna start, all those stupid registration thing again. My 4th semester on 26th of December. Spoil my mood!!! :( I really really for the 15,737th time...I hate studying.

9) Gonna try to loose some weight after gaining so much weight. I don't want to spoil all my clothes.

10) Survey for a new handphone. My phone has been giving me weird sounds as if an alien were trapped inside. Time to get a new one after 2 long years. My longest phone ever.

11) Charities. Gonna find some place, help the needies. It's been ages since I do that. People say I m very ignorant (which is not true at all, I care for everyone, just that I m too busy sometimes and also I don't look like I care, which is very sad), very selfish (wooo, my ear hurts when I heard this, seriously it's like accusing you of stealing the chicken when you are vegetarian). So I need some time alone, for the community, not gonna care what people think.

So far, that's my plan. Don't know if it's gonna work out. Hopefully....
